Day 6: 11th Dec

The weather forecast predicted storms in the morning and indeed there were a few passing showers but these seemed to clear by 11am. We had a large fried breakfast and a light lunch at the villa. Grant and I debated whether to try our luck at snorkelling but in the end, we decided that the weather was ideal for sunbathing and catching up on some reading.
At 4:30pm Grant and I took a drive to Reef Bay beach at the bottom of the hill and walked the full length in search of shells. We were the only ones on this stunningly rugged beach.
we were back at the villa for 5:30 in time for sunset. It turned out to be the best one of the holiday so far.
We booked dinner for 7:30pm at The Terrace restaurant in Cruz Bay. Last year it had been our favourite restaurant and it didn't disappoint this year either.
Dad and I both chose the scallops to start and they were melt in the mouth tasty. Grant had wahoo for his main course and I chose the crab stuffed prawns. Both dishes were excellent and Dad was delighted with his rack of lamb.
Back at the villa we had coffees and hot chocolate before bed time.

Day 5: 10th Dec

We watched another impressive sunrise from the balcony. We had an early breakfast and Grant and I left the villa before 9am ready to make the most of the clear weather. We headed to Hansen Bay and snorkelled out to Pelican Rock. We saw plenty of stunning coral and colourful fish plus a few stingrays. The visibility was very good so Grant managed to take some good photos.
Just after 11am we headed back to the villa and freshened up. We drove to Coral Bay and had a wonderful lunch at Miss Lucy's overlooking the water. Grant had a very tasty roti and Dad chose a steak wrap. My toasted coconut mango quinoa salad was just what I felt like and was delicious.
It was hard to leave this lovely spot.
We drove to Saltpond Bay with the intention of walking over to Drunk Bay but the path was inaccessible due to water.
After a quick stop at Starfish Supermarket we were back at the villa in time for sunset.
Dinner was a range of dips, snacks and salads that we enjoyed while playing cards.

Day 4: 9th Dec

We were all awake and clicking cameras at 6:30 capturing the wonderful sunrise. We had a cooked breakfast outside on the patio and then just relaxed on the balcony and even managed to fall asleep again.
At 11am Grant and I headed over to Francis Bay for our first snorkel trip of the holiday.
The water was a bit choppy but the viability was surprisingly clear. We managed to see a couple of stingrays, barracudas, huge tarpon and even a shark.
At 1pm we returned to the villa and cooked some veggie burgers on the grill.
The rest of the afternoon was spent just relaxing around the villa.
At 5:30 we sat on the balcony and watched the sunset.
We went into Cruz Bay for dinner at the Waterfront Bistro. All three of us had the crab and ricotta crepes to start which were deliciously light. My scallop main course did not disappoint and Grant's tuna dish was cooked to perfection. Dad chose the grilled mahi and he too thoroughly enjoyed his meal. Despite some very tempting desserts we resisted and headed home.

Day 3: 8th Dec

First Impressions

We were all awake before sunrise and we had an early breakfast. We finished our unpacking and just relaxed around the villa. At midday we headed over to Caneel Bay hotel for lunch. Dad's first impression was very positive as we entered the grounds and he was not disappointed. We had a lovely lunch which started off with some sushi to share. Our dragon roll was very tasty and it was obvious that the chefs knew what they were doing and had used fresh ingredients. My crab cakes for my main course were delicious and Dad was very impressed with his turkey club sandwich that came with onion rings. After lunch we had a wander around the grounds. On the way home we stopped at Deli Grotto for some salads and we also bought some more groceries from Starfish supermarket. Dad and I also made a quick stop at St. John Spice for some 'Kiss of the Jumbie' coffee.
We had a very casual dinner at the villa using items we had purchased from the supermarket such as dips and nachos. We played a few card games and then watched some TV in the upstairs TV room. We were all in bed by 10pm!

Day 2: 7th Dec

Getting Warmer

We took the hotel shuttle bus to Newark airport. Once through security, we had a tasty breakfast at Rudy's Diner. We flew to St. Thomas which was approximately a 3.5 hr flight. Once there we took a taxi to Red Hook and caught the 4pm ferry to St. John. Grant sorted out our Courtesy car rental which was a huge Ford Jeep. Dad and I had a quick cocktail at High Tide and Grant picked us up and after a quick stop at Starfish Supermarket, we drove to Fish Bay and Dad saw our villa Sol Inclination for the first time, just in time for sunset. We had a quick refresh and went to Fatty Crab for dinner. The mahi sliders and mahi noodle broth were the highlights though to be honest, all our dishes were excellent.
